Bamboo usually has a very smooth surface. Not good for birds as it doesn't offer much grip and can lead to foot sores. Cages often come with pine poles that we are normally told to discard. Natural wood with soft bark is what our avian vet recommends as it provides lots of grip.
Saying that though, Jardine Jessie has two stands with pine perches, which are well used and have been heavily marked and roughened over the last few years. I went over them with a very course grain sand paper when I built the stands. They ain't pretty, but I don't suppose Jessie cares how they look. She just needs to be in the main areas of activity where she can stand and supervise.
"Off the shelf" stands are often cheaper than things you can build yourself, and it was cheaper for us to buy an outdoor bird table and replace the top with untreated pine than build one from scratch. We just used the pedestal, bolted a 20x20" board on top, then attached various bits and pieces.
