Look at those fabulous baby eyes :)
They start almost black and slowly start to lighten little by little, that colour change happens over a few months in the first year and get lighter and lighter week by week before vanishing entirely and getting the adult eye colours by the time they are a year old slowly changing to a straw yellow colour. Below is the colour changes of the eyes in months.

That's a really interesting chart DizzyBlue. My two Congo greys are slightly odd in that at approx ten years old, they've both not reached the 'straw yellow' stage yet. They both have very pale yellow eyes, like the 20-month old bird in your graphic. I've often wondered about this, but I guess every bird is different....
