Our parrot is about 8 months old and is extremely nervous when approaching the cage and struggling to tame. Also within a month of having the parrot he picked up the word hello but won't say anything new.

What are we doing wrong please

Well some birds talk some don't it's up to them not a given thing.
Training wiseyou need the training section and the following threads
Lots of time and patience and then another dollop of the same. It's not just about them learning to "read us" we need to "read them"

Oh and they are just like human kids ... they get bored really easily so just because you want to doesn't mean they want to. It's a game of balance and reading what you bird is trying to tell you :)
You'll get there as long as you are will to put in the time and effort stay cool calm and collected and remember they are not dogs and cats trained easily as food driven, these are not really pets they are companions and very very smart.
Some catch on really fast others well they can take their time just like us humans
 
Some birds will never talk - or, they can actually learn a word and choose to stop saying it.
You will read/hear some people saying that a certain species is known to talk, a gender of species (e.g. male Budgies) is known to talk, etc. but it's never guaranteed. Also, it doesn't mean that the bird is unhappy with you. They just don't want to talk.

Sprite, our female Sun Conure, says about a dozen words/phrases. We never tried to teach her to say any. She decided what she wanted to repeat.
 
The only talker I have used to speak Punjabi but never heard anything, he does use some english words and phrases and changed one from cookies to walkies. It is hilarious what they choose to repeat back, relax and enjoy hun ditto @DizzyBlue's comments.

I guess he is using 'hello' as potentially a cue that he wants interaction hun.
