My new addition, JoeJoe, is not that fond of veggies, but if he’s in the kitchen when he’s sitting on a stand I might give him a whole Brussels Sprout, or some broccoli or a French bean while I’m preparing food, and he’ll eat them! I tried giving him some rocket a few days ago and he ate that too! Maybe it’s the novelty of being in the kitchen and attention from me? Try different things with her.
There are a few veggies that Jardine Jessie will often ignore if they are in her food bowl, but she will eat them if I offer them to her by hand. I've always assumed that food offered by a "chosen one" / friend has more value. I always introduce new foods to her in this way, rather than just putting it in her food bowl. Sometimes she accepts it long-term, sometimes not, but at least she tries it.
